Swiss Chard with Lemon and Garlic

A simple preparation that highlights the earthy flavor of Swiss chard.

Ingredients

  • 1 large bunch Swiss chard, stems and leaves separated and chopped
  • 2 tablespoons olive oil
  • 2 stalks green garlic, thinly sliced
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chard stems and green garlic, and sauté for 3-4 minutes until beginning to soften.
  3. Add chard leaves and cook, stirring occasionally, until wilted, about 2-3 minutes.
  4. Stir in lemon zest, lemon juice, salt, pepper, and red pepper flakes if using.
  5. Serve immediately as a side dish.
