Squash Blossom Quesadillas
A delicate and flavorful Mexican-inspired dish that showcases the subtle flavor of squash blossoms.
Ingredients
- 12 squash blossoms, stamens removed and roughly chopped
- 2 scallions, thinly sliced
- 1 cup shredded Monterey Jack or Oaxaca cheese
- 4 small flour tortillas
- 1 tablespoon olive oil
- Salt to taste
- Salsa or sour cream for serving
Instructions
- Heat a large skillet over medium heat.
- Place a tortilla in the skillet and sprinkle with 1/4 of the cheese.
- Top with 1/4 of the squash blossoms and scallions, and a pinch of salt.
- Sprinkle with a bit more cheese and top with another tortilla.
- Cook until golden brown on the bottom, about 2-3 minutes, then flip and cook the other side.
- Repeat with remaining ingredients. Cut into wedges and serve with salsa or sour cream.
