Sautéed Kale with Scallions

A quick and nutritious side dish that pairs well with almost any main course.

Ingredients

  • 1 large bunch kale, stems removed and roughly chopped
  • 3-4 scallions, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Red pepper flakes (optional)
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add scallions and cook for 1 minute until fragrant.
  3. Add garlic and red pepper flakes (if using) and cook for 30 seconds.
  4. Add kale to the pan and toss to coat with oil. Cook, stirring occasionally, until kale is wilted and tender, about 5-7 minutes.
  5. Season with salt and pepper. Serve with lemon wedges.
