Sautéed Kale with Scallions
A quick and nutritious side dish that pairs well with almost any main course.
Ingredients
- 1 large bunch kale, stems removed and roughly chopped
- 3-4 scallions, thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Red pepper flakes (optional)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add scallions and cook for 1 minute until fragrant.
- Add garlic and red pepper flakes (if using) and cook for 30 seconds.
- Add kale to the pan and toss to coat with oil. Cook, stirring occasionally, until kale is wilted and tender, about 5-7 minutes.
- Season with salt and pepper. Serve with lemon wedges.
