Garlic Scape Pesto
A vibrant, garlicky pesto that's perfect for pasta, sandwiches, or as a dip.
Ingredients
- 1 cup chopped garlic scapes
- 1/2 cup fresh parsley leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 1/4 cup pine nuts or walnuts
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Add garlic scapes, parsley, Parmesan, and nuts to a food processor. Pulse until coarsely chopped.
- With the processor running, slowly drizzle in olive oil until smooth.
- Add lemon juice, salt, and pepper. Pulse to combine.
- Taste and adjust seasonings as needed.
- Store in an airtight container in the refrigerator for up to a week.
