Garlic Scape Pesto

A vibrant, garlicky pesto that's perfect for pasta, sandwiches, or as a dip.

Ingredients

  • 1 cup chopped garlic scapes
  • 1/2 cup fresh parsley leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 1/4 cup pine nuts or walnuts
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Add garlic scapes, parsley, Parmesan, and nuts to a food processor. Pulse until coarsely chopped.
  2. With the processor running, slowly drizzle in olive oil until smooth.
  3. Add lemon juice, salt, and pepper. Pulse to combine.
  4. Taste and adjust seasonings as needed.
  5. Store in an airtight container in the refrigerator for up to a week.
