Garlic Scape and Spinach Frittata

A versatile egg dish that's perfect for breakfast, lunch, or dinner.

Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 cup chopped garlic scapes
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add garlic scapes and cook for 2-3 minutes.
  4. Add spinach and cook until wilted, about 1 minute.
  5. Pour egg mixture over vegetables and cook until edges begin to set, about 2-3 minutes.
  6. Sprinkle with feta cheese and transfer to the oven. Bake until set, about 10-12 minutes.
  7. Let cool slightly before slicing and serving.
