Garlic Scape and Spinach Frittata
A versatile egg dish that's perfect for breakfast, lunch, or dinner.
Ingredients
- 8 large eggs
- 1/4 cup milk
- 1/2 cup chopped garlic scapes
- 2 cups fresh spinach, roughly chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium heat. Add garlic scapes and cook for 2-3 minutes.
- Add spinach and cook until wilted, about 1 minute.
- Pour egg mixture over vegetables and cook until edges begin to set, about 2-3 minutes.
- Sprinkle with feta cheese and transfer to the oven. Bake until set, about 10-12 minutes.
- Let cool slightly before slicing and serving.
